Perfect for a dinner party (Makes approx 50)
250g salted butter
1 pint of milk
2tsp chilli powder
3tsp Smoked paprika
1/2 goat’s cheese log crumbled
2 diced red onion
2 diced red chillies
Bring the butter gently to the boil until it has all melted, remove from the heat and add in the milk.
Place the flour, seasoning, chilli powder and paprika into a mixer with a beater attachment, mix together and then slowly add the butter/milk mix until a thick paste is formed. Add the cheese until melted into the paste. Add in the eggs slowly – 1 at a time, followed the onions, chillies and any other spice you may like.
Put into a sealed container and pop into the fridge for 1-2 hrs until cold and firm to the touch.
Quenelle using 2 table spoons and drop into hot oil and deep fry until golden in colour and firm – if they are not quite firm enough, place them into the oven for a couple of minutes at 180c.
Serve with a fresh salad.
