Roasted Courgette with Lamb Meatballs, Feta & Yogurt

Ingredients

4 medium courgettes -cut lengthways
Olive oil

1lb lamb mince
1 red onion finely diced
2 cloves garlic – crushed
1 tsp cumin
1tsp chopped coriander

Marinara sauce (recipe below)
Feta crumbled

Rocket salad

Yogurt
Cucumber grated
Pomegranate seeds
Mint

Using a teaspoon scrape seeds out of courgettes.  Roast in oven until soft with olive oil, salt and pepper.

Sweat off onion and garlic until soft (no colour) cool.  Mix with lamb mince, coriander and cumin with a pinch of salt and pepper

Roll into small meat balls , brown in a saucepan 5-6 minutes until cooked.
Add marinara sauce and lay on top of the courgette.
Bake in oven 5-10 minuets

Mix cucumber with yoghurt, pomegranate seeds and chopped mint.

Plate with crumbled feta, a spoon of yogurt and a hand full of rocket and enjoy

Marinara Sauce

1/2 onion sliced
1 clove garlic
1 stick celery
400g Tin chopped tomato
Tblsp tomato purée
Pinch fresh basil

Sweat off onion, garlic and celery in olive oil.

Add chopped tomato and paste and cook for 10 mins low simmer.

Add basil and stick blend to a smooth consistency.

Season to taste with salt and sugar/vinegar as needed.
